Beef and Broccoli in Plum Sauce
Ingredients:
1 head of Broccoli, cut into florets
250 grams of Beef, cubed
3 Tablespoon of Soy sauce
1 Tablespoon of Sherry
1 clove of Garlic, pressed
1 Tablespoon of Plum jam
1 teaspoon of Cornstarch
4 Tablespoons of Peanut oil or Sunflower seed oil
Directions:
In a large skillet, heat up 2 Tablespoons of oil on high heat and cook the meat. Whisk together the remaining ingredients in a small bowl. Once meat has cooked, pour in sauce mixture and reduce heat to medium. Mix in broccoli and cover with a lid. Let steam/cook for about 3 minutes. Remove lid and then stir broccoli and meat to ensure the sauce is not sticking to the bottom of the pan as it reduces. If the broccoli is not cooked at this point, re-cover with lid and steam another 3 minutes. Once broccoli is cooked, remove lid and mix constantly until the sauce is reduced to a consistency you are satisfied with. Remove from heat and serve immediately. Goes well over rice.
Serves 4 with rice.
