Spaghetti Pesto
Ingredients:
40g (1.5oz or about 6) sun dried Tomatoes, diced
3 +1 Tablespoons Olive Oil
1Tablespoon Pine nuts, crushed
1/2 teaspoon crushed fresh Basil leases
7 Cups Water
1 teaspoon Salt
200g (about 8oz) Spaghetti
2 Tablespoons of pre-made Basil Pesto
1 Tablespoon grated Parmesan Cheese
8 medium-sized Black Olives, diced
Directions:
Soak the sun dried tomatoes in 3Tablespoons of Olive Oil, or use oil-packed sun dried tomatoes instead.
In a medium-sized pot, bring water to a boil and add salt and then add spaghetti. Boil Spaghetti for 10 minutes, or until done.
Meanwhile, in a small skillet, saute pesto, 1 Tablespoon of Olive Oil, Parmesan cheese, and pine nuts on low heat until combined.
When spaghetti is done, drain in a colander, and them immediately return it to pot. Pour the pesto sauce over the spaghetti and mix well.
Arrange Spaghetti on a plate and top with the sun dried tomatoes and black olives.
Serves 2-3
