Ravioli

I love ravioli! I’m not a big noodle fan, but when it comes to ravioli, there’s no better pasta. These raviolis come from my local Italian store…I believe the grandmother makes them fresh weekly. The filling is always different and always tastes great! This week I have mixed together porcino ravioli (triangular) and ricotta and spinach ravioli (cresent).

Ingredients:
500 grams of your favorite fresh Ravioli
1 Tablspeoon of Butter
1 Tablespoon of Olive Oil
1/4 Cup of sliced Red Onion
4 large cloves of Garlic, diced
2 Tablespoons of freshly grated Parmesan
1/2 a teaspoon of Chives, diced
Salt to taste

Directions:
In a pot of boiling salt water, cook the ravioli for about 5 minutes; they should all be floating at the top of the pot. Strain in collander and quickly rinse with cold water. Set aside.
In the same pot (dry thoroughly before using with oil or it wil splatter!), heat the butter and oil on medium heat with the garlic. Cook until fragrant, then add the ravioli and red onion to warm up (less than 1 minute). Place on serving plate and lightly sprinkle with salt, parmesan, and chives.

Serves 4.

Devilish Eggs

These deviled eggs are great in the Spring time because of the bounty of colorful ingredients!

Ingredients:
6 hardboiled Eggs
3 teaspoons of Mayonnaise
Salt to taste
Pepper to taste
1 Tablespoon of diced Red Onion
1/16 teaspoon of Garlic powder
2 Tablespoons of diced Red Bell Pepper
1/4 teaspoon of Dijon style Mustard
1 Tablespoon of diced Dill Pickles

Directions:
Carefully remove the shells from the eggs and discard (or use them as compost in your garden..I heard they’re great for tomato plants!). Cut the top off of each egg, about 1/4 the way down, and scoop out the yolk into a bowl. Set the egg whites aside for now.
In the bowl with the yolks, combine all other ingredients and mix well so that the yolk has a creamy consitency. Spoon the mixture back into the eggs and serve.

Colorfull Salad

My husband put together a nice salad the other day for dinner…so I thought I’d share!

Here’s what he put together:
Boston Bibb Lettuce
Tomtoes
Olives
Carrots
Red Onion
Feta Cheese

Then, I topped it off with salt, pepper, and some Brandy wine vinegar. It was absolutley delicious!

Deli Swap May

Sent this off to my Deli Swap partner today! This month’s swap is all about picknicks. And, as you may guess, finding non perishable picknick foods that can also be sent over seas….well, it’s not exaclty easy. Oh, and guess what!? My partner is from Miami…she was born and raised very close to where I was born and raised! Small world it is…

Well, I can’t wait to get my package! I’ll let you know what’s in it when it arrives!

Mary, Mary, quite contrary, How does your garden grow?

Last year I had the fortune of meeting the right people in town and getting involved in our local Intercultural Garden. I got a plot, and have planted my plants and seeds! So, soon you can expect to see fresh herbs, vegetables, and fruits…I’m not sure what category hops fall under, but those have already started to grow as well. I’m really excited! I can’t wait for the tomatoes…I LOVE tomatoes!

Cevapcici

Cevapcici are delicious little meat “fingers”. They were introduced to me by my Serbian friend Denis. They are best when grilled, but this recipe allows you to make them at home in your oven as well! I love to eat them with Tzatziki sauce..mmmm

Ingredients:
250 grams ground Beef
250 grams ground Pork
1/2 teaspoon of Salt
1/4 teaspoon of Pepper
1/8-1/4 teaspoon of Cayanne Pepper
1 small Egg, slightly beaten

Directions:
Preheat your broilerto highest heat. Combine all ingredients in a bowl. With your hands, form meat fingers by rolling some of the meat mixture between your two hands (as if you were making a caterpillar). Place them on a plate so that they are not touching one another. Place in the freezer for about 15 minutes so that they harden a bit and are less fragile. Once ready to cook, place them on parchment paper-covered baking sheet and bake for about 15 minutes or until completely cooked through.

Make a meal out of it! Serve this with rice, tzatziki, and salad!

Fürther Jubiäums Secco

Fürther Jubiäums Secco for Fürth’s 1000 year anniversary. It is really delicious and worth the €4,99 I paid for it. There is also a Jubiläums Sekt which is an extra €2,00, but I haven’t had a chance to try that one yet.

Baby Hershey’s

I’d like to thank all of the people who were involved in giving me my long-distance baby shower! The bows on the Hershey’s bars are really cute! I’m glad my mom got to bring some, they were really yummy!
