Soup with those garlic rolls…


Yeah, I said that correctly. Trust me, the garlic rolls are so good you will be having soup with your garlic rolls instead of garlic rolls with your soup!

This tomato soup is one of my favorite recipes that I make over and over again through the year. Since it uses fresh tomatoes, tomato season is the best time to make it. But, on a hot summer day it’s sometimes hard to sit in front of a bowl of hot soup. So, save it for those cooler rainy summer days. Or, if where you live is anything like where I live…save it for those cold summer days.

Homemade Garlic Roll Goodness – recipe


By the time Friday got here and I was getting ready to cook my homemade tomato soup, I realized that I had lost my friends garlic roll recipe. I emailed her, but since she’s in NZ (10 hours ahead) she didn’t get my email until the next day. Turns out, anyways, that she left it in the US.

What to do??

Use Pizza Dough and improvise!

mmm…Balsamic Bacon


I previously posted about a BLT steak that I made, and I decided to make this recipe one step further, and then off the deep end. This would be something like the antithesis of the low-carb BLT steak.

mmm…carbs.

So, with the taste of the BLT steak still lingering in my mind 2 months later, I decided to get started. And, as before, this dish came out so well, it was hard to stop eating. I asked my husband what he thought about it, to which he replied it was “good” (his expression was quite dull). But, by the time the meal was over, I had witnessed him serve himself another 4 times! Just say NO to noodles!

Well, maybe not to all noodles. But, definitely to lasagna noodles! From now on, I’m only making lasagna with tortillas!

This was just another one of my “crazy ideas”. Well, I guess not so crazy, but I sure was surprised how delectable it came out! I used some going-stale tortillas that I had in my fridge. Oh man, I’ve never had such fluffy, smooth, lusciously soft lasagna before – ever. And, it wasn’t runny – I hate runny lasagna!
For my sauce I used my homemade enchilada sauce and layered in some ground meat* and sour cream and topped it off with some Gouda. You can use any sauce recipe you want – just make sure you use tortillas instead of noodles. It doesn’t matter if they’re torn or crumbling apart. They will soak in the delicious sauce et voi là – lasagna!

*Leave out the meat, and make it vegetarian!

Ikea Kebabs


Yes, Ikea kebabs. Common people – think outside of the box!

So, the butcher that I frequent has gone on vacation – as they do every year in August, but with the all the distractions that I had in July (family visiting), I simply forgot. I rushed to put my grocery list together Monday morning (they close at 13:00 on Mondays and Wednesdays), got ready, packed the baby in the stroller, and dashed off to go buy some meat…only to find a sign in the window saying that they’ll be back on August 28th.

Layers of Love


I really love making Tex-Mex layered salads. This is one of those dishes that I used to get so excited about as a child. I remember the first time I ever tasted one was at my friend Daren’s birthday party (I was somewhere between the age of 6-8). Man, his mom could make the yummiest party food! Sweet BBQ meatballs, chicken wings, hamburgers, oh and that layered salad that you had to ever-so-carefully scoop up with a tortilla chip.

Eventually, after enough pestering, my mom got the recipe and made it. If I remember correctly, she only made them for parties as well…because why would you want chips and dip for dinner?? And I just think – heck, I’d even have it for breakfast! Continue Reading »

Midnight Madness


I had been craving a custard-based ice cream for quite some time now. But, since I can’t eat sugar, I can’t just walk down to my local ice cream parlor and get myself a cone…I have to make it myself. This is actually quite fun when everything goes according to plan. I made the custard in the evening and had a whole bunch of egg whites left. Then, I remember that a really really long time ago I read on La Tartine Gourmande about a cream-less ice cream that was egg white based. So, I dug her recipe up and tweaked it quite a bit. It was a great hit. I served it for my husband and my in-laws and they were absolutely wide about it! And, I have to say…it came out much much better than the custard-based ice cream. It was a bit disappointing to me…too much vanilla flavor, and the ice cream didn’t freeze properly since made the mistake of mixing it while doing a load of laundry on boiling (our washer machine is under the kitchen counter where our mixer is). I was able to “save” it, but just barely. I’ll have to try again on another day. But, on the bright side, I found this glorious recipe!
