Refrigerator Pickles & Onions
As happens quite often, I landed at the blog of the Homesick Texan – she has some great stuff, you should check her out. This time it was about pickles.
I love pickles!
I’m not very fond of the pickles I can find in Germany – most of them contain sugar or artificial sweetener. I like my pickles to be sour.
My garden has been producing quite a few cucumbers lately, but not enough to warrant a canning event in my kitchen. So, I decided I’d try Homesick Texan’s Refrigerator Dill Pickles. As usual, I like to change it up a bit.
This fills 1 500ml jar:
Ingredients:
2 large pickling cucumbers (when it rains a lot, they can really grow large), sliced
1 small red onion, sliced
1 1/2 teaspoons of Salt
1/2 a teaspoon of Mustard seeds
1 Tablespoon of dry Dill
1/4 Cup of white Vinegar
Water
Directions:
Layer the cucumbers in the jar, then the onions. Dump on all the dry ingredients, and then pour in the vinegar and enough water to fill up the rest of the jar. Screw the lid on tightly. Shake for at least 1 minute. Refrigerate.
Then, for the next 6 days, shake for 1 minute once a day. On the 7th day – your your pickles!













What a great idea adding red onions–they’re so tasty when they’re pickled!
