Sombrero Pizza – recipe
My husband had the great idea of making this pizza the other day. It’s his toppings recipe, and it was quite yummy.
The egg is the top of the sombrero and the corn and kidney beans denote that it’s Mexican (in Germany). Anything with kidney beans and corn in Germany is classified as Mexican, but I can’t complain, it’s tasty.
Ingredients:
1 Recipe “Pizza Pie”*
1/3 Cup canned Kidney Beans, drained and rinsed
1/4 Cup canned Corn, drained and rinse
1 Egg
*The Pizza Pie recipe calls for the use of 2 pie dishes, in this recipe, I use 1 huge round glass casserole dish (maybe 17 or 19 inches in diameter??)
Directions:
Make the pizza according to these directions.
Instead of topping with pepperoni and mushrooms, top with kidney beans and corn. Then, crack the egg onto the middle of the pizza. Bake the same 20 minutes that is mentioned in the directions for the Pizza Pie.
Makes 2-4 servings (depending on if you eat moderately or a lot of pizza).
