Caprese Chicken Sandwich – recipe

I came across this delicious-looking recipe the other day. I don’t even remember how, but I am really glad that I did.

It was so delicious!! The only difference is that I made my chicken in the broiler instead of on the grill.

You can find this delicious recipe here at Dine and Dish.

Perfect for tomato season! I’d stick a big leaf of basil from my garden in there, too.

The vibrant tomato looks very appealing. I will keep that recipe in mind for a sunny weekend lunch.

I made this dish the other day and I must say it took me away to sunnier climates with its fresh taste. Nothing like beating the winter blahs with a taste of summer.
