French Rosted Potatoes – recipe

This is a really fabulously easy and great tasting recipe to make any night of the week. And, it goes great with the Citrus Salted Fish I posted yesterday.

Ingredients:
12 small Red New Potatoes, halved
3 Tablespoons Olive Oil
1 teaspoon Herbs of Provence
1 teaspoon Salt
1/4 teaspoon Pepper

Directions:
Preheat oven to 200°C (392°F).

Place the cut potatoes in a large bowl. Pour olive oil over the potatoes and toss to coat. Add all other ingredients and mix thoroughly until evenly distributed over all potatoes.

Line a baking sheet with parchment paper, a silicone baking mat, or aluminum foil. I prefer parchment paper for potatoes, personally, because I find it leaves them crisper.

Place all potatoes cut-side down on the baking sheet in a single layer. Drizzle any of the left-over olive oil mixture from the bowl over the potatoes.

Bake for 20-30 minutes, or until the cut-side has turned golden.

Makes 4 servings.

    Simple and delicious! I like that you use herbes de Provence – it’s such a nice flavor combination.

    Next time, try sprinkling on some sweet paprika.
