For this month’s Taste&Create I was partnered with Natalie from Perrys’ Plate. I’m really excited to have met Natalie through her blog because it seems we have a few things in common and seem to have similar culinary taste.
I found quite a few recipes that I wanted to make from her site, but because of time constraints I decided on making her Roasted Eggplant and Caramelized Onion Pizza.
It was a bit more time consuming than the sort of pizzas I usually made, but really only by and extra 30 minutes. The combination of bacon, goat cheese, mozzarella, roasted bell pepper, caramelized onion, and eggplant is what drew me to this recipe. So many toppings on a pizza and the all taste great together.
I do have to add though, that the caramelized onion was so very sweet that it threw the flavor off balance a bit. BUT, after having a slice of pizza cold for dinner, the flavors had mingled much better and it tasted perfect.
Also, to me pizza is considered a low-price meal because I make everything from scratch, but after adding the goat cheese, roasted bell pepper, and eggplant it turned the dish into a quite pricey special-occasion pizza. Don’t let this stop your from trying it at least once – it really is fantastic.
