Chocolate Coconut & Rice Milk Ice Cream – no added sugar – recipe

Back a few weeks ago I was unable to eat all forms of sweets: sugar, brown sugar, fructose, honey, agave syrup, milk, and even fruit. Luckily, those terrible4 weeks are over. You have no idea how sweet coconut milk tastes when you haven’t had one sweet piece of food for 4 weeks!

Anyways, it was a really hot summer day and I was craving ice cream. Unable to drink milk at the time, I took a nice thick and tasty coconut milk that I get here out of Thailand called Aroy-D and mixed it with rice milk to make a nice and “sweet” ice cream for myself. I made it on 2 occasions, once with cocoa powder and once without. I prefer the chocolate-free version. Ideally, it would taste better with sugar, so add to your liking if you are not on a restricted diet such as a candida diet.  This is also a great base for a vegetarian or vegan ice cream. Steak With Sauteed Fennel and Olives – recipe

As I mentioned last week, I have been cooking quick and simple meals lately. It is quite an adjustment on my part since I have always enjoyed cooking more elaborate meals that take 1 to 2 hours to prepare. Now, food needs to be on the table in less than 30 minutes…

But, while I am pressed for time, that in now way means that I am willing to sacrifice the quality or flavor of my food. Meals just need to be re-thought out.

I’d like to share another recipe with you that I discovered on Real Simple that really blew my mind away. Four ingredients plus some salt and pepper and you have a delicious meal in 25 minutes.

This was also the first time I have ever eaten fennel, and I am hooked! It’s delicious, easy to prepare, and dirt cheap. Continue Reading »
