I made these zucchini rolls for dinner for us and a friend and they were a big hit. I love making appetizers for dinner some times – especially when it’s really hot outside. They are pretty simple and tasty.

This makes a great meal for those days that you need something quick. Who said that great food has to take a long time??
You can have this dish at the table in under 30 minutes – that’s less time than you will wait for a table at a restaurant on a busy night, add driving time to and from that restaurant and you would already be half way through this lovely meal at home. Oh, and this dish not only goes really well with a nice tossed salad, but a cool glass of white wine – which you would not be able to enjoy with your restaurant meal should you be driving yourself home.

My husband put this wonderful meal together for us last week. He found the hush puppies recipe here – we tweaked it a bit. I did the cocktail sauce. And, I am no lover of cocktail sauce, but I blew myself away with this sauce that I put together for my boys so much so that I ended up consuming half of it myself!

So, what is an ice cherry?? An ice cherry is an ice cube shaped like a cherry with a stem.

That was a lot easier when our son was not lactose intolerant. A few days after this third birthday it showed-up. Now, we can find all sorts of lactose-free products in town, but definitely not ricotta cheese.

We had tortillas from the night before when I made hummus, and my husband Googled “simple pizza sauce” and found a fantastic recipe, and the tortilla pizza was born.

We have had some fun grilling every once in a while the last few months. This specific time we made ribs and grilled vegetable pockets. And, let me “warn” you – the pockets look boring and drab, but they explode with delicious flavor – and they are soooo easy to make!
For the ribs, I made one of my previous recipes and steamed them the night before – this is how they become nice and soft. The recipe calls for just seasoning it with salt and pepper, but next time I will use my dry rub to give it more flavor.
