Homemade Beer Battered Shrimp and Hush Puppies with Cocktail Sauce – 3 recipes
All that talk of making beer yesterday made me hungry! And, nothing like some delicious southern food to satisfy our hunger – I tend to miss being home in the summer and this really hits the spot.
My husband put this wonderful meal together for us last week. He found the hush puppies recipe here – we tweaked it a bit. I did the cocktail sauce. And, I am no lover of cocktail sauce, but I blew myself away with this sauce that I put together for my boys so much so that I ended up consuming half of it myself!

Beer Battered Shrimp
Ingredients:
1 kg (about 2 Lbs.) of uncooked Shrimp, shells removed
1/4 Cup Worcestershire sauce
1/2 Cup Lemon Juice (Juice of 1 large Lemon)
1/2 teaspoon Salt
1/2 teaspoon Pepper
350mL (12Oz.) of Beer*
1 Cup Flour
1 teaspoons Baking Powder
1/4 teaspoon Paprika
1 teaspoon Salt
1 Cup of Flour
1/2 teaspoon Salt
1 teaspoon Onion Powder
Vegetable Oil for frying
*choose a beer with a strong flavor that you would not mind drinking; avoid light beers or “watery-flavored” beers
Directions:
In a bowl, marinade the shrimp for 30 minutes in the Worcestershire sauce, lemon juice, 1/2 a teaspoon of salt, and pepper.
Heat your vegetable oil for deep frying.
For the batter, pour the beer into a very deep bowl and wait for it to finish foaming. In a separate bowl, whisk together the 1 cup of flour, paprika, and 1 teaspoon of salt. Using a sifter, add the flour mixture to the beer – this is important to make sure there are no lumps in the batter. Whisk the batter together by hand. Set aside.
In a smaller bowl whisk together, by hand, 1 cup of flour, 1/2 a teaspoon of salt, and onion powder.
To fry: Take a piece of shrimp, roll it in the flour mixture, dip in the batter, and place in the hot oil. Fry for a minute or 2 – until the battered shrimp turn golden brown, then remove to a paper towel-lined plate.
4-6 servings.
Hush Puppies
Ingredients:
2 Cups Yellow Corn Flour (corn meal)
1 Cup Flour
3/4 teaspoon Seasoned Salt
1/2 teaspoon Salt
1/2 teaspoon Pepper
1 teaspoon Baking Powder
2/3 teaspoon Baking Soda
2 Eggs
1 Cup Buttermilk (or 1 cup lactose free milk + 1 teaspoon white vinegar mixed)
1/8 Cup Goose Grease (or Bacon grease) – room temperature
Vegetable Oil for frying
Directions:
Heat vegetable oil for deep frying.
Whisk, by hand, corn flour, flour, seasoned salt, salt, pepper, baking powder, and baking soda. Mix in the eggs, buttermilk, and grease.
Using a tablespoon measuring spoon, drop dough into the hot oil and fry until brown on all sides and floating. Remove to a paper towel lined plate.
Makes 4-6 side dish servings.
Cocktail Sauce
Ingredients:
1/3 Cup Ketchup
1/2 teaspoon Horseradish paste
juice of half a small Lime
1/8 teaspoon Worcestershire Sauce
Directions:
Mix all ingredients together in a bowl until well combined. Enjoy!
