Bratwürst & Apple Frittata – take 2 – recipe
Last summer I blogged about a Sausage & Apple Frittata that I made with some great spicy smoked Italian Sausage that I got at my local Italian market. This time I decided to try it with some bratwürst…oh, and I seem to have left out the onions!
I have to say that I really likedit and my son LOVED it, but I miss the spiciness.
Ingredients:
4 Bratwürst, chopped
4 large Baking Potatoes, cleaned and chopped
2 sour Green Apples, cored and chopped
1 Tablespoon Olive Oil
teaspoon Marjoram (or Oregano – I was out)
Salt to tast
Directions:
Place the potatoes in enough water to cover and boil them for about 20 minutes, or until cooked through. Strain in a colander and set aside.
In a large skillet, heat the olive oil on medium-high heat and then fry the bratwüst in in until cooked through. Add the potatoes to that and mix constantly until the potatoes are covered in as much oil as possible so they will brown. Then, add the apples and combine. Cook until the potatoes are slightly browned/crispy to your liking – about 5-15 minutes ( didn’t brown mine – so I think I only did 5 minutes).
Makes 4 servings.
