Sweet Potato Fries – recipe

The other day I came across this yummy-looking recipe from Smitten Kitchen for her sweet potato fries.

They were super easy to make and a BIG hit with the whole family. In fact, we’re making them again this weekend!

Ingredients:
1 teaspoon Coriander Seeds
1/2 teaspoon Fennel Seeds
1/2 teaspoon Oregano
1/4 teaspoon Red Pepper Flakes
1 teaspoon Salt
4 Sweet Potatoes
3 Tablespoons Vegetable Oil

Directions:
Preheat oven to 218°C (425°F).

Cut the sweet potatoes into 1-inch wedges (do not peel!). Toss the wedges with the vegetable oil.

Coarsely grind the coriander, fennel, oregano, and red pepper flakes in a food processor. Combine the spices and salt and then sprinkle all over the potatoes.

Place the potatoes on a lined baking sheet and bake for 20 minutes on one side and then 20 minutes on the other side.

Makes 4 servings.

    I love sweet potato fries or yam fries as I call them. There is a restaurant in town that serves skinny ones as an appetizer with a dip…so addictive!!

    Yes – I for one tried something along these lines and they were like mashed sweet potatoes encased in little bags.

    How did you get yours crispy?

    I, too, would like to know more about the crisp factor. I love sweet potato fries, but often they turn out rather floppy. I don’t want to flour them (which didn’t really crisp them any more when I tried it in the past), have tried in deep fryer and the oven. Any suggestions?
