Moist Brownie Cupcakes – Taste&Create – recipe

I am always on the look-out for a good brownie recipe. I have been on the look-out for years now and have never found anything really worth mentioning. Well, it looks like my search ends here.

While searching my Taste&Create partner’s blog – My Sweet and Savory- I came across a blog post of hers where she raves about a fantastic King Arthur brownies. Well, she was right. They are perfectly moist, but not dense like fudge.

These are really the perfect brownies.  And, since I always love to see what a cupcake&brownie looks like from the inside, I thought I’d share this picture with you:

I would change 1 thing and one thing only. I would not add any cinnamon for a regular batch of brownies. However, I would leave the cinnamon for a Christmas batch of brownies. With the cinnamon they taste like a special type of cookie/cake that they have here in Germany.

Ok, here is the recipe: Continue Reading »

Peanut Butter Cookies – Taste&Create

I am so embarrassed…I am late with my Taste&Create post. Lately my days have just been melting together. It’s the end of January – where did November and December go???

I have been so exhausted lately: a baby, a toddler, a house hold, planning and organizing our move, cooking daily, etc…etc…etc… And, to keep me sane, I am taking a 45 minute jog with a friend once a week where we manage to run 6k. I was so surprised the first time we went running that I made it that far…I could never manage more than 3,5k in my life and always felt like falling flat on my face afterwards. Now, I just feel like a million dollars to do nothing but run and talk with my friend about life. So, our goal by April is to be able to run 10k. Currently it’s unimaginable, but I’m looking forward to the feeling of being able to reach my goal.

So, back to cookies. In all the stress of life, it’s important to stop and make time to bake. Because, although it is extra work, just being able to grab a cookie and close out the world for a few bites will keep you going throughout the day.

And, my partner’s peanut butter cookies are so very delicious that I ate most of them…I love peanut butter cookies. Please, check out her delicious recipe here on Dil Se..

Creamy Pesto Pene – recipe – Taste&Create

Well, it has been quite a while since I last blogged about food! I have to say that being a parent of 2 children is four times the work as being the parent of once child..it’s hard to believe but it’s true.

I have been cooking and documenting my meals, but have not had time to blog. I am trying to change that, but family has priority.

I am now back to hosting Taste&Create and have taken some time to blog about a delicious meal that I made from my partner’s blog Tasty Treats…. . I made Poornima’s Penne in a Creamy Pesto Sauce with Fresh Mozzarella, Grape Tomatoes, and Chicken. And, it was absolutely delicious! We all had 2 helpings! And, another plus was that it was quick and easy to make.

I was really looking forward to trying something more Indian, but my baby has such a sensitive stomach that I have to avoid onions, beans, and spicy foods of all kinds. It limits what I can eat…especially since I love Tex-Mex so much, but in a year I will most likely not be breast feeding any more…or he will have out grown it.
These are some really delicious looking dishes from Poornima’s blog:
Khaman Dhokla
Chana Masala
Sev Puri
Chicken Biryani

Check out Tasty Treat’s delicious Creamy Pesto Sauce with Fresh Mozzarella, Grape Tomatoes, and Chicken recipe here!

Chicken Frarej – Taste&Create – recipe

Well, this is the last Taste&Create I will be participating in until August. I am on vacation as of this Sunday when the in-laws arrive.

This month I was partnered with Temperance from High on the Hog. It was a tough decision deciding what to make. I really wanted to try to make her Golden Vanilla Bean Caramels, but knowing that my in-laws would be arriving soon and the tons of things I had (and still have to!!) accomplish before they arrive made me chose a dish that I could make as a meal.

I chose to make High on the Hog’s Chicken Frarej - a blackened chicken with lots of lemon, garlic, and potatoes. I figured it would be easy and very tasty.

I do have to say that the meal was very tasty, but only after some major tweaking.

I decided to take Temperance’s recommendation of baking a whole chicken (this would give us a meal for a few days and allow me to get more accomplished around the house). I prepared and baked it according to her directions, but after 1 hours in the oven, the chicken was quite tasteless, the potatoes still hard, the chicken was swimming in juice, and the skin not blackened. I am pretty sure this would have turned out differently had I used the chicken breasts because they are a drier meat and would have soaked up much more the the liquid and flavors of the marinade.

We were hungry, so we ate some for lunch, and since the oven was still warm, I decided to make some adjustments and put it back in for some more oven time. The changes I made were: I removed 3/4ths of the juices in the casserole dish, and added lots of pepper to the chicken. I baked it another 45 minutes and it came out fantastic.

I will definitely make this dish again, but with further adjustments. Bellow is the recipe I would use when I make this again: Continue Reading »

Taste&Create May 2009 – September 2009

Published by myamii under Taste&Create

Hello to all my fellow Taste&Create blogger and any of you who are interested in participating between May 2009 and September of 2009.

I am going on a long “vacation” from Taste&Create, but I will be back and be running the event again starting October 1st, 2009.

Why? Well, I’m having a baby :) Consider this pre-maternity leave.

While my due-date is end of August/beginning of September, I will have lots of family starting to visit us here in Germany as of mid May, and my family and I will then be taking a long 5 week vacation to the US before the baby comes. Once we return in mind July there will be a lot of lose ends to tie-up before the baby arrives.

Have no fear, my great blogger friend Min from The Bad Girl’s Kitchen will be hosting Taste&Create and taking care of all of you.

Those of you who have already signed-up for May with me, I have forwarded your sign-ups to her. Those of you who have not yet signed up, sign-up for May ends May 8th, please email Min at: cowgirlmin07 [at] gmail [dot] com .

Entries will still be submitted and posted on the Taste&Create website, so the only thing that has changed is who you email to sign-up.

If anyone has any questions, I will, of course, be available via email, although it may take me a few days to answer you since I will be getting used to my new life with a two-year-old and a new baby.

For those of you who are curious:
Is it a boy or girl?
I have no idea…the baby only lets us see his/her back during ultrasounds. So, it’s still a surprise. There’s only more ultra sound in mid June, and if we don’t see anything then, well, then it will just stay a surprise.

I wish you all happy blogging and cooking thoughout the summer months.

Many cheers,

Nicole

Roasted Eggplant and Caramelized Onion Pizza – recipe – Taste&Create

For this month’s Taste&Create I was partnered with Natalie from Perrys’ Plate. I’m really excited to have met Natalie through her blog because it seems we have a few things in common and seem to have similar culinary taste.

I found quite a few recipes that I wanted to make from her site, but because of time constraints I decided on making her Roasted Eggplant and Caramelized Onion Pizza. Continue Reading »
